- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1½ cup chicken broth
- 1½ cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- ¼ teaspoon nutmeg
- ½ cup grated parmesan cheese
- Fresh parsley, chopped
Instructions
- Cook the rice according to the package directions.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with onion powder, garlic powder, paprika, salt, and pepper. Add to the skillet. Sear for 2-3 minutes, then stir and cook an additional 3-4 minutes or until chicken reaches an internal temperature of 165˚F. Remove chicken from the skillet and set aside.
- Reduce the heat to medium. Add butter to the skillet and melt. Stir in minced garlic and cook for about 30 seconds. Add flour and stir until a paste forms, about 1 minute.
- Whisk in chicken broth and heavy cream. Bring to a simmer, allowing sauce to thicken for 1-2 minutes. Stir in remaining salt, black pepper, nutmeg, and parmesan cheese. Return the chicken to the sauce and mix well.
- To serve, spoon the smothered chicken over cooked rice and garnish with freshly chopped parsley.
