Description

Creamy Spinach Artichoke Butter Beans are a delightful blend of flavors, featuring tender butter beans and fresh spinach in a rich and creamy sauce, making it a great choice for a quick dinner or a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 2 shallots thinly sliced
  • ½ cup canned artichoke hearts drained and roughly chopped
  • 2 cloves garlic minced
  • 28 ounces (2 cans) butter beans drained and rinsed
  • 1 ½ cups vegetable stock
  • ½ cup whole cream
  • ¼ cup grated parmesan cheese
  • 3 cups baby spinach
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley optional topping

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add shallots and cook until translucent for about 3 to 5 minutes.
  2. Stir in minced garlic and artichoke hearts, cooking for an additional 2 minutes while stirring.
  3. Add the rinsed butter beans and vegetable stock, mixing well. Simmer the mixture for 10 minutes to allow some reduction.
  4. Mix in the cream and parmesan cheese, continuing to simmer for another 5 minutes.
  5. Fold in the baby spinach, sea salt, and black pepper, removing from heat once spinach wilts. Stir in lemon juice before serving.
  6. Garnish with fresh parsley and serve alongside crusty bread.

Notes

For added flavor, try adding some crushed red pepper flakes for a hint of spice.
This dish can be made ahead of time and reheated before serving.
