Description

  • 2 cups carrot sticks
  • 2 cups chopped celery, peeled
  • â…“ cups chopped fresh parsley
  • ¼ large red onion, thinly sliced
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • ½ tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon sea salt
  • ½ cup frank’s hot sauce
  • 3 tablespoons salted butter
  • 2 tablespoons honey
  • 1.5 tablespoons avocado oil
  • 17.6 oz. halloumi, cut into 1-inch cubes
  • â…“ cup blue cheese crumbles
  • â…“ cup blue cheese dressing

Instructions

  1. In a large bowl, combine the carrot sticks, celery, parsley, and onion.
  2. In a separate bowl, whisk together the white wine vinegar, olive oil, lemon juice, honey, and salt. Pour this mixture over the vegetables and toss well to coat.
  3. Cover the bowl and refrigerate the salad while preparing the buffalo sauce.
  4. For the buffalo sauce, combine Frank's hot sauce, butter, and honey in a small saucepan. Heat gently until simmering, whisking, then remove from heat.
  5. In a large skillet over medium-high heat, add avocado oil and then the halloumi. Allow it to brown on one side, taking your time to let it release liquid before flipping to brown all sides.
  6. Once browned, remove the halloumi from the skillet and toss it with the buffalo sauce. Allow it to rest for 5 minutes.
  7. Assemble the salad by topping the carrot and celery mixture with the buffalo halloumi, blue cheese crumbles, and blue cheese dressing. Serve immediately.

Notes

Ensure to let the halloumi rest after cooking for the best flavor absorption from the buffalo sauce.
Adjust the amount of hot sauce based on your spice preference.
You can substitute blue cheese with feta for a different flavor profile.
