Ingredients

  • 1 ½ cups diced mango
  • 1 shallot diced
  • 1 jalapeno pepper seeded and diced
  • ⅓ cup chopped cilantro
  • 2 to 3 tablespoons fresh lime juice
  • kosher salt and pepper
  • 1 14 ounce can black beans, drained and rinsed
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • 1 cup freshly grated monterey jack cheese
  • oil or butter for cooking
  • 8 to 12 small fajita-size flour tortillas

Instructions

  1. In a bowl, combine diced mango, shallot, jalapeno, cilantro, lime juice, and a pinch of salt and pepper. Toss thoroughly, and refrigerate if desired.
  2. Mash the black beans in a bowl with salt, pepper, smoked paprika, ground cumin, and garlic powder, leaving some whole beans for texture.
  3. Heat a nonstick skillet over medium heat. Add the mashed black beans and cook, stirring occasionally, until the edges become crisp and they're warmed through. Add cheese and allow it to melt.
  4. Transfer the crisped black beans to a plate.
  5. In the same skillet, add a bit of oil or butter, and on one side of each tortilla, sprinkle some cheese and add some black beans. Fold the tortilla and cook on both sides until golden and cheese is melted.
  6. Serve the tacos warm with the mango salsa!

Notes

Make the mango salsa a few hours in advance for even better flavor.
For a spicier option, leave some seeds in the jalapeno pepper.
Adjust the amount of lime juice to taste for added tang.
