Description

These Crumb Apple Muffins are a delightful treat, blending diced apples, cinnamon, and a sweet crumb topping. Perfect for breakfast or an afternoon snack, this easy recipe creates warm, comforting muffins every time.


Ingredients

  • 2 ½ cups diced apples (about 3 small/medium apples)
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cup (62g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • ½ cup (118ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup (245g) sour cream
  • 2 cups (248g) all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. For the apples, place diced apples in a medium bowl, add 1/2 inch of water, and microwave for about 2 minutes until they start to become slightly translucent. Drain and sprinkle with cinnamon and sugar, then set aside.
  3. Prepare the crumb topping by stirring together all topping ingredients in a medium bowl and setting aside.
  4. In a bowl, mix the eggs, sugar, and oil until creamy. Then add vanilla, vinegar, baking soda, cinnamon, and salt. Incorporate the sour cream and gradually add flour, mixing well. Fold in the apples gently.
  5. Fill muffin cups approximately 2/3 full with the batter, then sprinkle the crumble over each muffin.
  6. Bake for 15-19 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes in the pan, then transfer to a cooling rack.
  7. Store muffins in an airtight container for up to 3 days or freeze for up to one month.

Notes

Ensure the apples are diced very small to blend well into the muffins.
For extra flavor, consider adding nuts or raisins into the batter along with the apples.
These muffins can be frozen; wrap them tightly to enjoy later.
