- ⅓ cup balsamic glaze
- ¼ cup lemon juice
- 1 tablespoon honey
- 1 tablespoon minced garlic
- 1½ teaspoons italian seasoning blend
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil (divided)
- ¾ cup cherry tomatoes (approximately 18–20 tomatoes)
- ½ cup fresh mozzarella pearls (approximately half of an 8-ounce package)
- 1 tablespoon fresh basil (chopped, plus additional for garnish)
Instructions
- Pound chicken cutlets to an even thickness and season with salt and black pepper.
- In a bowl, mix balsamic glaze, lemon juice, honey, minced garlic, and italian seasoning blend.
- Heat 2 tablespoons of olive oil in a skillet over medium heat and cook chicken cutlets until golden brown and cooked through, about 5-7 minutes per side.
- Add cherry tomatoes and pour the balsamic mixture over the chicken. Simmer for about 2-3 minutes until the sauce thickens slightly.
- Toss in fresh mozzarella and basil, then cook for another minute until the cheese is slightly melted, stirring gently.
- Serve warm, garnished with additional basil if desired.
