Description

  • 4 boneless-skinless chicken cutlets (approximately 1 ½ pounds total, each piece approximately ½ inch thick)
  • ⅓ cup balsamic glaze
  • ¼ cup lemon juice
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 1½ teaspoons italian seasoning blend
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil (divided)
  • ¾ cup cherry tomatoes (approximately 1820 tomatoes)
  • ½ cup fresh mozzarella pearls (approximately half of an 8-ounce package)
  • 1 tablespoon fresh basil (chopped, plus additional for garnish)

Instructions

  1. Pound chicken cutlets to an even thickness and season with salt and black pepper.
  2. In a bowl, mix balsamic glaze, lemon juice, honey, minced garlic, and italian seasoning blend.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat and cook chicken cutlets until golden brown and cooked through, about 5-7 minutes per side.
  4. Add cherry tomatoes and pour the balsamic mixture over the chicken. Simmer for about 2-3 minutes until the sauce thickens slightly.
  5. Toss in fresh mozzarella and basil, then cook for another minute until the cheese is slightly melted, stirring gently.
  6. Serve warm, garnished with additional basil if desired.

Ensure chicken is pounded evenly to cook through properly.
Feel free to substitute balsamic glaze with a homemade reduction for enhanced flavor.
