Description

This Easy Blackberry Pie features ripe blackberries enveloped in a flaky, buttery crust, making it a delightful choice for dessert lovers. Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse to mix.
  2. Add cold diced butter and pulse until the mixture resembles coarse crumbs.
  3. Pour in cold water and pulse until moist clumps form.
  4. Transfer the dough to parchment paper, divide into balls, and flatten into discs. Do not knead.
  5. Wrap each disc in plastic wrap and refrigerate for one hour.
  6. Preheat the oven to 400 degrees once the crust is ready.
  7. Prepare the blackberry filling by heating water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Gently mix in sugar and cornstarch, cooking until the mixture thickens. Set aside.
  9. Sprinkle flour on the counter and roll out the bottom crust to a 12" circle, then place it in a 9" pie plate.
  10. Spread the blackberry filling evenly on the crust, avoiding the edges.
  11. Roll out the remaining crust and place it over the pie, trimming and sealing the edges.
  12. Whisk together egg and water, brushing it over the top crust.
  13. Sprinkle with sugar if desired and cut slits for steam to escape.
  14. Bake for 15 minutes, then reduce the heat to 350 degrees and continue baking for 45-50 minutes until bubbly and golden brown.
  15. Check at 30 minutes, covering if crust browns too quickly.
  16. Cool the pie at room temperature before serving.

Notes

Ensure butter is very cold for a flaky crust.
You can use frozen blackberries if fresh ones are not available.
Cool the pie completely for easier slicing.
