Ingredients
Scale
- 2 packages (5.3 oz each) Boursin cheese
- 1 1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or finely minced
- Salt to taste
- Pepper to taste
- Balsamic reduction (for drizzling)
- Crackers or crostini (for serving)
Instructions
- Allow the Boursin cheese to soften at room temperature for 15-20 minutes while preparing the other ingredients.
- In a small mixing bowl, combine the chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Mix well and let sit for 5 minutes to enhance the flavors.
- Spread the softened Boursin cheese in an even layer in an 8-9 inch shallow serving dish.
- Top the Boursin layer with the bruschetta mixture, making sure to leave the juices behind in the bowl.
- Drizzle balsamic reduction over the dip and add extra basil for garnish. Serve with crackers or crostini and a spreading knife.
Notes
For best results, use vine-ripened or Roma tomatoes.
Let the Boursin cheese soften for better spreading.
