Description

This Easy Peach Cobbler features fresh, juicy peaches and a delightful gluten-free topping made from almond flour. With simple ingredients and easy preparation, it’s the perfect dessert for gathering around the table with family or friends.


Ingredients

  • 8 medium-large peaches, peeled, pitted and sliced (about 56 cups)
  • 1 tablespoon fresh lemon juice
  • 24 tablespoons maple sugar or coconut sugar, adjust sweetness to preference
  • 1/2 teaspoon cinnamon
  • 1 tablespoon arrowroot flour or tapioca flour
  • pinch sea salt
  • 1 1/2 cups blanched almond flour
  • 1/2 cup arrowroot flour or tapioca flour
  • 1/3 cup + 1 tablespoon maple sugar or coconut sugar
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons aluminum free baking powder
  • 1/3 cup + 2 tablespoons refined coconut oil, melted and cooled to almost room temp
  • 1/3 cup unsweetened almond milk or preferred dairy free milk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9" square or round or 11" oval baking dish with coconut oil.
  2. Toss the peaches with the filling ingredients until well coated. Spread the mixture evenly in the prepared baking dish and set aside.
  3. For the cobbler topping, mix all topping ingredients in a large bowl until a smooth batter forms. Allow it to rest for 5 minutes to thicken.
  4. Drop the batter over the peaches in 4 parts using a scoop or spoon, gently flattening each scoop without completely spreading the batter.
  5. Bake for about 40 minutes or until the filling is bubbly and the pastry top is browned and set.
  6. Let the cobbler cool at room temperature for 20-30 minutes to allow the filling to set. Serve warm or at room temperature, optionally with coconut vanilla ice cream or coconut whipped cream.

Notes

Adjust the sweetness of the filling to your liking by varying the amount of maple or coconut sugar.
For an added touch, sprinkle some chopped nuts over the batter before baking for extra crunch.
Store any leftovers in an airtight container in the refrigerator for up to three days.
