- 12 g cornstarch (1 ½ tablespoon)

Instructions
- In a large bowl, whisk together the flour, sugar, and salt.
- Incorporate the cold butter using a pastry blender or two forks until the mixture resembles coarse, pebbled sand.
- Add the egg yolks and ice water, mixing until the ingredients form a 'shaggy mess'.
- Transfer the mixture to a clean surface and knead gently until it forms a cohesive dough, but do not over-knead.
- Divide the dough in half, shape into disks, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes. This dough can be stored in the fridge for up to 2 days.
