Description

This Easy Whole Roast Chicken features crispy skin and juicy meat, made with simple ingredients and minimal prep. Perfect for a quick dinner or special gatherings, it’s sure to impress with its rich flavor and comforting aroma.


Ingredients

  • 1 whole chicken – 4-5 lb
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • lbs baby potatoes
  • 3 carrots
  • 1 tbsp olive oil – for vegetables
  • Salt and pepper – to taste (for vegetables)

Instructions

  1. Remove the whole chicken from the fridge and let it reach room temperature for 20-30 minutes.
  2. Pat the chicken dry using paper towels. In a small bowl, mix 2 tbsp olive oil, 2 tsp dried thyme, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp paprika, 1 tsp salt, and 1 tsp black pepper, then spread the mixture evenly over the chicken.
  3. Optionally, stuff the cavity with fresh herbs like parsley or thyme for added flavor.
  4. Preheat the oven to 450°F.
  5. Toss 1½ lbs baby potatoes and 3 carrots with 1 tbsp olive oil, about 1 tsp salt, and about 1 tsp black pepper, then place these in a roasting pan.
  6. Position the chicken on top of the vegetables, inserting an oven-safe thermometer into the thickest part of the thigh, avoiding the bone.
  7. Roast in the oven at 450°F for 30 minutes.
  8. Lower the oven temperature to 375°F and continue to roast for 50-70 minutes, until the chicken reaches 165°F in the thigh. If not fully cooked, continue roasting as needed.
  9. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Notes

For even crispier skin, ensure the chicken is very dry before applying the seasoning.
Consider adding lemon slices or garlic cloves in the cavity for additional aroma and flavor.
Feel free to substitute vegetables based on what you have available, such as onions or zucchini.
