Description

This Elegant Graduation Cake with Fondant Cap Topper is a delightful centerpiece for your celebration, featuring a rich blend of flavors with buttercream frosting and charming decorative elements that make it special.


Ingredients

  • 2 Yellow sheet cakes
  • 2 Chocolate sheet cakes
  • 1 Cotton candy cake
  • 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
  • 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch Rice krispie treats (Can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes (9×13 dimensions), 2 chocolate sheet cakes (9×13 dimensions), and 1 cotton candy dome cake (5-inch diameter). Save any leftover cotton candy cake batter for cupcakes.
  2. Allow all cakes to cool completely.
  3. Prepare the yellow buttercream frosting while the cakes are baking and cooling.
  4. Create the cap cake first by placing the dome cake on a cake board. Smoothly frost it with buttercream and chill in the refrigerator for 20 minutes.
  5. Roll out black fondant and apply it to the chilled dome cake, smoothing it out and trimming excess.
  6. Make the cap's top by cutting a square piece of cardboard, coloring the edges with a black edible marker, and layering it with black fondant.
  7. Use corn syrup to attach a ribbon folded in half to a small fondant circle, place it on top of the square cardboard, and secure it to the dome cake with melted chocolate or royal icing.
  8. For the edible diploma, shape rice krispie treats into a cylinder, apply buttercream, and wrap in white fondant.
  9. Attach two fondant circles on the diploma with buttercream and wrap a red ribbon around it.
  10. Assemble the cakes by placing the chocolate sheets side by side on a large cake board, frosting them, and stacking yellow cakes on top.
  11. Pipe roses along the sides and top of the cake with yellow icing.
  12. Decide the placement for the diploma and cap, inserting supports, before decorating the cake board with 'Congratulations Class of 2024' letters.
