- 1/3 cup fresh lemon juice
- 2 tablespoons lemon zest (about the zest of two lemons)
- 1 small shallot diced fine
- 4 garlic cloves
- 1 tablespoon dijon mustard

- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 4 pounds bone-in skin on chicken thighs
Instructions
- In a large bowl, combine the ingredients for the marinade.
- Add the chicken thighs to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 24 hours.
- Preheat your oven to 400 degrees Fahrenheit.
- Transfer the chicken to a baking dish and pour the marinade over it.
- Cover and bake for 45 to 55 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Uncover the chicken, turn on the broiler, and cook for an additional 2 to 3 minutes, watching closely to prevent burning.
Notes
Marinating the chicken for a longer time enhances the flavor even more.
