Description

This Grilled Corn Elote Style is a flavorful twist on classic street corn. Made with juicy corn, creamy mayonnaise, zesty lime, and tangy cheeses, it’s an easy and delicious addition to any summer gathering or BBQ.


Ingredients

  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks from the corn, leaving the core intact.
  2. Preheat a grill or cast iron pan and grill the corn, turning it until slightly charred on all sides.
  3. In a small bowl, combine mayonnaise, sour cream, and chopped cilantro.
  4. Remove the corn from the grill and brush it with the mayonnaise mixture.
  5. Squeeze fresh lime juice over the corn and sprinkle with Parmesan and cotija cheese, along with chili powder to taste.
