  • 1 tablespoon olive oil or avocado oil
  • 2 teaspoons fresh grated ginger
  • 4 cloves garlic minced
  • 2 lb ground chicken
  • 1 small yellow onion finely diced
  • 2 cups shredded carrots
  • 1 (8-oz) can water chestnuts drained and diced
  • butter lettuce for serving
  • for toppings: sliced green onions, crushed peanuts, avocado, and/or fresh cilantro
  • 1/2 cup coconut aminos or low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 2 tablespoons peanut butter or cashew butter
  • 2 tablespoon rice wine vinegar
  • 1 tablespoon water
  • 1 tablespoon cornstarch

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the ginger and garlic, sautéing for about 1 minute until fragrant.
  3. Stir in the ground chicken and cook until browned, breaking it apart with a spoon.
  4. Add onion, carrots, and water chestnuts, mixing well.
  5. In a small bowl, whisk together the coconut aminos, hoisin sauce, honey, peanut butter, rice wine vinegar, water, and cornstarch.
  6. Pour the sauce over the chicken mixture and stir well, cooking for an additional 2-3 minutes until heated through and thickened.
  7. Serve in butter lettuce leaves, topped with your favorite toppings.

Notes

You can customize the toppings according to your preference.
These wraps are perfect for meal prep; just keep the filling separate from the lettuce until ready to serve.
