Description

Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 425°F and line 6 wells of a 12-cup muffin tin with paper liners, leaving space between each liner.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until no streaks remain.
  3. Add 1.5 cups of diced Granny Smith apples to the dry ingredients and toss to coat with flour.
  4. In a medium bowl, whisk the avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold gently until no streaks of flour remain.
  6. Fill each muffin liner to the top with the batter, about 4-6 tablespoons per well.
  7. In a small bowl, mix together the topping brown sugar and cinnamon, then sprinkle it over the filled muffins. Add reserved diced apple on top.
  8. Bake at 425°F for 5 minutes, then reduce temperature to 350°F and bake for an additional 13-18 minutes until a toothpick comes out clean.
  9. Let the muffins cool for 5-10 minutes in the tin, then transfer to a wire rack. Repeat with remaining batter.
  10. For optional drizzle, mix powdered sugar and milk until smooth and drizzle over cooled muffins.
