Description

These Healthy Applesauce Muffins are deliciously moist, nutritious, and easy to make. They’re packed with oat flour, applesauce, and a hint of cinnamon, perfect for breakfast or a healthy snack. Enjoy homemade goodness with every bite!


Ingredients

  • 1 ½ cups oat flour
  • 1 cup rolled oats, plus more for topping
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil or avocado oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, combine the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Stir to combine.
  3. In a separate large bowl, whisk together the eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil. Mix until smooth and well combined.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Avoid overmixing.
  5. Divide the batter evenly among the muffin cups. Top with additional rolled oats.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to substitute almond milk with any other plant-based milk.
These muffins can be stored in an airtight container for up to 3 days or frozen for later enjoyment.
For added sweetness, mix in some chopped nuts or dried fruit.
