- 2 tablespoons olive oil
- 3 cloves garlic, grated on a microplane
- 1 1/2 teaspoons dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 28 oz crushed tomatoes
- 1 teaspoon sugar
- 1 tablespoon unsalted butter
- kosher salt and freshly ground pepper, to taste
Instructions
- In a saucepan, heat olive oil over medium heat.
- Add grated garlic and cook for 2 minutes, stirring frequently, until fragrant.
- Mix in dried oregano and crushed red pepper, cooking for 1 more minute until fragrant.
- Pour in crushed tomatoes and sugar, then reduce heat to low.
- Simmer the mixture for about 20 minutes until it thickens.
- Stir in the unsalted butter and season with salt and freshly ground pepper to taste. Allow to cool before using.
Notes
This sauce can be made ahead and stored in the refrigerator for up to one week.
For a smoother texture, blend the sauce after cooking if desired.
Feel free to adjust the spice levels by adding more or less crushed red pepper.
