  • 4 lbs medium or large yellow onions
  • 6 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons packed dark brown sugar
  • 2 teaspoons kosher salt

Instructions

  1. Cut the onions in half from root to tip and remove the root with a paring knife.
  2. Thinly slice each onion half lengthwise into half moons, about ¼-inch thick, and place in a large mixing bowl.
  3. In a large pot over medium heat, add butter and olive oil, swirling to coat the pot.
  4. Add a handful of onions to the pot in batches, cooking and stirring for about 2 minutes until soft and translucent.
  5. Reduce heat to medium-low and cook the onions, stirring occasionally, for 45-50 minutes until they caramelize to a dark color.
  6. Season the onions with brown sugar and salt, cooking for an additional 5-7 minutes until well mixed.
  7. Remove from heat, let cool, and store in an airtight container in the fridge.
