- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons salted butter (melted)
- 28 ounces sweetened condensed milk
- ½ cup sour cream
- 4 large egg yolks
- ¾ cup key lime juice
- ¼ teaspoon pure vanilla extract
- 2 teaspoons lime zest (optional)
Instructions
- Preheat the oven to 350°F (177°C).
- Line a 9-inch square baking dish with parchment paper, leaving handles, and lightly grease it.
- Combine graham cracker crumbs, granulated sugar, ground cinnamon, and melted butter in a mixing bowl, then press into the bottom of the prepared baking dish to form the crust.
- In another bowl, whisk together sweetened condensed milk, sour cream, egg yolks, key lime juice, and vanilla extract until smooth.
- Pour the filling over the crust and spread evenly. If desired, sprinkle lime zest on top.
- Bake in the preheated oven for 15-20 minutes or until set.
- Let cool at room temperature before refrigerating for at least 2 hours before slicing into bars.
Notes
For a tangier flavor, increase the amount of key lime juice.
Store leftover bars in an airtight container in the refrigerator for up to 4 days.
The crust can be made ahead for convenience.
