  • 8 ounces spaghetti
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 3 garlic cloves minced
  • zest of one lemon
  • juice of one lemon
  • 1/2 teaspoon kosher salt
  • dash freshly ground black pepper
  • 1/3 cup grated parmesan cheese

Instructions

  1. Bring a large pot of water to a boil and stir in 1 teaspoon of kosher salt. Add the spaghetti and cook for the time specified on the package. Reserve 1 cup of pasta water before draining.
  2. As the spaghetti nears completion, heat a large skillet over medium heat and melt the butter. Stir in the minced garlic and lemon zest, cooking for about one minute until fragrant.
  3. Mix in the lemon juice, 1/2 cup of the reserved pasta water, 1/2 teaspoon kosher salt, and a dash of black pepper. Whisk to combine.
  4. Afterward, add the drained spaghetti to the skillet and toss to coat. Stir in the grated parmesan cheese, adjusting with additional reserved pasta water for a smoother sauce. Season with extra salt and pepper according to taste.

Notes

Reserve extra pasta water for a creamier sauce if needed.
Adjust seasoning with salt and pepper as desired.
