Description

These Marinated Tomatoes are bursting with flavor and made from fresh ingredients. Quick to prepare, they make an excellent addition to any meal or a healthy snack.


Ingredients

  • 1 pound grape or cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 to 2 cloves garlic, grated
  • 1 tablespoon finely chopped basil
  • 1/2 tablespoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh thyme
  • dash of crushed red pepper flakes
  • kosher salt, to taste

Instructions

  1. In a medium bowl, combine the halved tomatoes, olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and kosher salt. Stir until well combined.
  2. Cover the bowl tightly with plastic wrap and let it sit at room temperature for at least 30 minutes, preferably 1 to 2 hours. Stir the mixture once or twice during the marinating process. If marinating for more than 2 hours, place the bowl in the fridge.

Notes

For maximum flavor, let the tomatoes marinate for at least 2 hours.
You can adjust the seasonings according to your taste preference.
These marinated tomatoes work great in salads, on sandwiches, or as a side dish.
