- 1 deep dish pie shell (16 oz)
- 1 cup diced chicken
- 2 cups fresh spinach
- 1/4 cup sun dried tomatoes, diced
- 2 green onions, thinly sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Instructions
- Preheat the oven to 400ËšF. Line the pie crust with parchment paper, fill it with dried beans, and pre-bake for 12-15 minutes until golden brown. Remove it from the oven and allow it to cool. Lower the oven temperature to 350ËšF.
- In a bowl, combine eggs, heavy cream, milk, salt, and pepper. Whisk until fully blended.
- Chop the spinach and place it in the bottom of the pre-baked pie crust. Layer chicken, sun dried tomatoes, green onions, and cheeses over the spinach.
- Pour the egg mixture over the top of the layered ingredients. Set the quiche on a baking sheet and bake for 45-55 minutes or until the center is barely set.
- Allow the quiche to cool for 20 minutes before slicing. Serve warm or at room temperature.

Allow the crust to cool completely before adding the filling to prevent sogginess.
