Description

These Marry Me Chicken Sliders combine delicious flavors of creamy whipping cream, sun-dried tomatoes, and shredded rotisserie chicken. Ideal for a quick, tasty meal, these sliders are perfect for gatherings or a cozy dinner at home.


Ingredients

  • ¾ cup heavy whipping cream
  • ½ cup sun-dried tomatoes, soaked in hot water, drained, & chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes
  • ⅓ cup grated parmesan cheese
  • 3 cups rotisserie chicken, shredded
  • 1 package king’s hawaiian sweet rolls (12 count)
  • ½ cup fresh baby spinach
  • 1 cup monterey jack cheese, shredded
  • ¼ cup unsalted butter, melted (½ stick)
  • 1 teaspoon garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F and spray a 7×11-inch baking dish with nonstick cooking spray.
  2. In a large bowl, combine heavy whipping cream, sun-dried tomatoes, garlic powder, kosher salt, black pepper, crushed red pepper flakes, and grated parmesan cheese.
  3. Add the shredded rotisserie chicken to the mixture, stirring until well combined.
  4. Slice the sweet rolls in half horizontally and place the bottom halves in the prepared baking dish.
  5. Spread the chicken mixture evenly over the bottom halves of the sweet rolls.
  6. Top with baby spinach and shredded monterey jack cheese.
  7. Replace the top halves of the rolls on top of the cheese layer.
  8. In a small bowl, mix melted butter, minced garlic, and chopped parsley. Brush this mixture over the top of the rolls.
  9. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and the tops are golden brown.

Notes

Make sure the sun-dried tomatoes are well-drained to avoid excess moisture in the sliders.
Feel free to add other toppings like avocado or jalapeños for extra flavor.
These sliders can be assembled ahead of time and stored in the fridge before baking.
