Description

These Meal Prep Breakfast Burritos are packed with savory flavors and wholesome ingredients like eggs, cottage cheese, and your choice of meat. Great for a quick meal!


Ingredients

Scale
  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Begin by cooking the meat in a medium skillet over medium heat until fully cooked; use a slotted spoon to transfer it to a bowl.
  2. In the same skillet, add your chosen vegetables and a pinch of salt; sauté until soft, about 3-5 minutes.
  3. In a large bowl, whisk together the eggs and cottage cheese, seasoning with a little salt and pepper. Pour this mixture into the skillet with the sautéed veggies and scramble until fully cooked.
  4. To assemble the burritos, place one tortilla on a flat surface, add ¾ cup of the egg mixture, followed by 2 tablespoons of the cooked meat and 2 tablespoons of shredded cheese.
  5. Fold in the sides of the tortilla and roll it up tightly. Repeat the assembly process until all ingredients are used.
  6. For meal prep, wrap each burrito in foil and lay them on a baking sheet. Freeze until solid, then transfer to a freezer-safe bag or container where they can be stored for up to 2 months.
  7. Alternatively, keep the burritos wrapped in foil in the refrigerator for up to 1 week.
  8. To reheat, microwave until heated through or bake at 375°F for 15-20 minutes.
