- 1 lb meat, chicken sausage, bacon, ground beef, etc.
- 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
- Pinch salt
- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Begin by cooking the meat in a medium skillet over medium heat until fully cooked; use a slotted spoon to transfer it to a bowl.
- In the same skillet, add your chosen vegetables and a pinch of salt; sauté until soft, about 3-5 minutes.
- In a large bowl, whisk together the eggs and cottage cheese, seasoning with a little salt and pepper. Pour this mixture into the skillet with the sautéed veggies and scramble until fully cooked.
- To assemble the burritos, place one tortilla on a flat surface, add ¾ cup of the egg mixture, followed by 2 tablespoons of the cooked meat and 2 tablespoons of shredded cheese.
- Fold in the sides of the tortilla and roll it up tightly. Repeat the assembly process until all ingredients are used.
- For meal prep, wrap each burrito in foil and lay them on a baking sheet. Freeze until solid, then transfer to a freezer-safe bag or container where they can be stored for up to 2 months.
- Alternatively, keep the burritos wrapped in foil in the refrigerator for up to 1 week.
- To reheat, microwave until heated through or bake at 375°F for 15-20 minutes.
