Description

These Mediterranean Chicken Meatballs are packed with flavor from herbs and feta cheese, making them a perfect choice for a quick and healthy dinner. Enjoy them baked or pan-fried, served with tzatziki sauce for a delightful meal!


Ingredients

  • 1 pound ground chicken
  • ½ cup panko bread crumbs
  • ½ cup crumbled feta cheese
  • 1 egg, lightly beaten
  • 2 garlic cloves, pressed or minced
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped fresh mint
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon canola oil, if pan-frying
  • 1 tablespoon butter, if pan-frying
  • tzatziki or cucumber dill sauce, for serving

Instructions

  1. In a large bowl, mix together the ground chicken, panko, feta cheese, beaten egg, garlic, red onion, dill, mint, oregano, salt, and red pepper flakes.
  2. Dampen your hands and knead the mixture until well combined. Cover and refrigerate for at least 15 minutes or up to overnight.
  3. Scoop the mixture into 1 ½-inch meatballs and place on a cutting board. Dampen hands again to shape and roll the meatballs.
  4. For frying: In a skillet, heat canola oil and butter over medium heat. Cook half of the meatballs, turning every 1 ½ – 2 minutes, until browned for about 15 minutes.
  5. For baking: Preheat the oven to 425°F. Place the meatballs on a foil-lined baking sheet. Spritz with cooking spray or olive oil and bake until cooked through, about 15 minutes. Broil for an additional 5 minutes for crispiness.
  6. Serve warm or at room temperature with tzatziki sauce.

Notes

You can refrigerate the meatball mixture for up to overnight to enhance the flavor.
Serve with a side of Greek salad or lemon rice for a complete meal.
Adjust the red pepper flakes according to your spice preference.
