Description

These Mini Trifles combine delightful layers of strawberries, blueberries, mascarpone, and whipped cream. Perfect for celebrations, they’re an easy yet elegant dessert that will leave your guests craving more.


Ingredients

  • 1 ½ cups unsalted butter, at room temperature
  • 3 cups granulated sugar
  • 5 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups sifted all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups whole milk, at room temperature
  • 6 cups strawberries, chopped
  • 2 ½ cups small blueberries
  • 1 cup granulated sugar
  • 16 ounces mascarpone cheese, cold
  • 2 ½ cups heavy whipping cream, cold
  • 1 ¼ cup powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 325°F and generously grease two 5×9” loaf pans, allowing the butter, eggs, and milk to come to room temperature.
  2. Cream the butter and sugar together for several minutes until the mixture is light and fluffy.
  3. Gradually add the eggs one by one, ensuring each is well mixed before adding the next. Combine the last egg with the vanilla extract.
  4. In a separate bowl, sift the all-purpose flour, then measure out 3 cups. Add the baking powder and salt, combining half of the dry ingredients with half of the milk, mixing just until combined. Add the remaining ingredients and continue beating until thorough.
  5. Distribute the batter evenly between the two loaf pans. Bake at 325° for 60-70 minutes, checking for doneness with a toothpick inserted into the center. If it comes out clean, remove from the oven. Allow the loaves to cool for at least 30 minutes before removing them from the pans; gently run a knife around the edges to release the loaves. Let them cool completely before slicing.

Notes

For an elegant touch, layer the trifles in clear cups or glasses to showcase the colorful layers.
Feel free to substitute the fruits with your favorites like raspberries or bananas for variety.
Make sure all dairy products are well chilled to achieve the perfect whipped cream texture.
