Description

This Mixed Berry Crisp is a delightful treat, featuring fresh strawberries and blueberries topped with a buttery oat crumble. Ingredients

  • ¾ cup (93g) all purpose flour
  • ¾ cup (64g) quick cook oats
  • ¾ cup (150g) packed brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons (78g) cold unsalted butter, diced
  • ¼ teaspoon salt
  • 1 pound strawberries, hulled and sliced
  • 2 cups blueberries, frozen or fresh
  • ½ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons (24g) cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, prepare the crumble by mixing together the flour, brown sugar, oats, cinnamon, and salt. Use a pastry cutter to incorporate the butter until the mixture resembles small crumbs.
  3. In another large bowl, combine the strawberries and blueberries. Gently mix them with sugar, lemon juice, and cornstarch.
  4. Transfer the berry mixture to the bottom of an 8” square pan.
  5. Evenly distribute the crumble topping over the fruits and gently press down to compact.
  6. Bake in the preheated oven for 30–33 minutes, or until the crust is golden brown and the topping is crunchy. Serve warm or at room temperature, ideally with ice cream.

Notes

Let the crisp cool for a few minutes before serving to help maintain the filling’s consistency.
Feel free to substitute fresh berries with frozen ones if they’re out of season.
Serve with whipped cream or ice cream for an extra treat.
