- 2 tsp orange zest
- 1/2 cup freshly squeezed orange juice (about 1–2 navel oranges)
- juice of 1 lime or 2 tbsp extra orange juice
- 2 tbsp agave syrup
- 1 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
- 3/4 cup non-dairy evaporated milk
- 1/3 cup chia seeds (57g)
- 3 tbsp rolled oats (16g)
- 2–3 pitted medjool dates (40g)
- 2 tbsp coconut flakes (8g)
- 2 tbsp raw cashews (16g)
- 1 tsp orange zest
- 1/2 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
Instructions
- In a blender, mix the yogurt, orange zest, orange juice, and lime until smooth.
- Add agave, vanilla, and salt, blending again while slowly incorporating evaporated milk.
- Taste and adjust sweetness or salt as needed.
- Stir in chia seeds until evenly distributed, then refrigerate for 10 minutes.
- Stir again to break up clumps and let it gel in the fridge overnight.
- Pulse oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt in a food processor until crumbly.
- Divide the chia mixture into bowls or jars and top with the crumble before serving.
Notes
For a sweeter taste, adjust the amount of agave syrup to preference.
Allow the chia pudding to sit overnight for the best texture.
