Description

This Pasta Salad is a delightful dish that combines flavorful ingredients like salami, mozzarella, and fresh vegetables, making it perfect for gatherings and picnics. It’s easy to prepare and sure to impress your guests with its vibrant flavors and beautiful presentation.


Ingredients

  • 1 pound short pasta shapes such as rotini or bow ties
  • 8 ounces mini mozzarella balls, halved
  • 1 pound salami, chopped
  • 1 (6-oz) jar marinated artichoke hearts, drained and sliced
  • 3 cups cherry tomatoes, halved (about 1 ½ pints)
  • ½ cup black olives, sliced
  • ¼ cup chopped sun-dried tomatoes
  • 2 tablespoons sliced fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 cups italian dressing, homemade or store-bought

Instructions

  1. Cook the pasta following the package instructions. Drain it in a colander, then rinse immediately under cold water until cooled. Drain well again.
  2. In a large bowl, combine all the salad ingredients together.
  3. Pour the dressing over the salad mixture and toss well to coat it evenly.
  4. Cover the bowl and refrigerate for at least 1 hour prior to serving.

Notes

For an extra crunch, add some diced bell peppers or cucumbers.
This salad can be made a day in advance; just keep it covered in the refrigerator until you’re ready to serve.
Feel free to customize with your favorite vegetables or proteins.
