- 1 1/4 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- 2 cups unsalted butter, slightly cold
- 5 cups powdered sugar, sifted
- 1 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F. Grease three 8-inch cake pans and line with parchment paper, then spray again.
- Peel the peaches and chop them. Blend in a food processor until small pieces form. Let sit with sugar for 5 minutes before blending freeze-dried peaches into a crumb.
- In a bowl, sift together the all-purpose flour, cake flour, baking powder, baking soda, and salt, then set aside.
- Beat together the butter, oil, and sugar in a mixer until light and fluffy. Add the vanilla, eggs, freeze-dried peaches, and pureed peaches, mixing until combined.
- Incorporate the dry ingredients and buttermilk, mixing on low until just combined. Stir manually for a thorough mix.
- Evenly divide the batter among the three pans and bake for 25-30 minutes, checking with a toothpick for doneness.
- Allow cakes to cool in the pans for 10 minutes before transferring to a cooling rack to cool completely.
