Description

Ingredients

  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch

  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed light brown sugar
  • 1/2 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp honey
  • 2 large eggs, room temperature
  • 2 tbsp unsalted butter, melted
  • 1/2 cup white granulated sugar
  • 2 tsp ground cinnamon
  • 4 peaches, 1 lb cubed
  • 2/3 cup brown sugar, light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. In a medium bowl, combine the flour, baking soda, ground cinnamon, cornstarch, and salt. Set aside.
  2. In a larger bowl, using a mixer, beat the room temperature butter, brown sugar, and granulated sugar on high speed for 2 minutes until pale and fluffy.
  3. Add the eggs, vanilla extract, and honey. Mix on medium speed until well combined. Gradually add the dry ingredients, mixing on low until just combined.
  4. Preheat the oven to 350℉ (175℃) and line two cookie sheets with parchment paper. Allow the cookie dough to rest for 10 minutes.
  5. Using a large cookie scoop (approximately 2 ounces), portion out the cookie dough onto the prepared sheets, placing 6 dough balls per sheet.
  6. Bake for 12-14 minutes until the edges are lightly golden. After baking, let the cookies sit for 2 minutes and press a teaspoon gently into the center of each cookie to create an indent.
  7. Transfer cookies to a cooling rack and allow to cool completely.

Notes

For best results, use ripe peaches for a fuller flavor.
Feel free to adjust the amount of cinnamon to your taste preference.
