- 1 cup quick cooking oats
- 1 tablespoon chia seeds
- 1 cup milk
- 1.5 teaspoons vanilla extract
- 2 tablespoons maple syrup
- 1 cup chopped peaches
- ½ cup rolled oats
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- ¼ teaspoon ground cinnamon
- Plain Greek yogurt
Instructions
- Preheat the oven to 375ºF.
- Mix oats, one tablespoon of maple syrup, coconut oil, and cinnamon in a bowl until crumbled.
- Spread the crumble mixture on a small baking sheet and bake for 7-10 minutes until golden brown, stirring halfway.
- In a small saucepan, combine all ingredients for the oatmeal and set heat to medium/high.
- Bring to a boil, then lower the heat and stir continuously for 3-5 minutes while the oatmeal cooks and thickens.
- Serve the oatmeal topped with the crumble and a dollop of Greek yogurt.
Notes
Feel free to use fresh or frozen peaches based on what you have.
Adjust the sweetness by adding more or less maple syrup to your liking.
