- 1.5 kg yellow peaches, peeled, stone removed, cut into eight wedges
- 1/4 cup caster sugar
- 1 tsp cornflour
- 1 tbsp lemon juice
- 1/8 tsp salt
- 1 1/4 cups plain flour
- 1/3 cup caster sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 85 g unsalted butter
- 1/2 cup plain yoghurt
- 1 tsp demerara sugar
- 1/2 tsp cinnamon powder
- Ice cream or whipped cream
Instructions
- In a large bowl, mix the peaches with sugar and let them macerate for 40 minutes to release their juices.
- Preheat your oven to 210°C (410°F) during the last 20 minutes of maceration.
- After maceration, drain the peaches in a colander, reserving the juices.
- In a large bowl, combine 1/4 cup of the reserved peach juice with cornflour, salt and 1 tbsp lemon juice, mixing until well combined.
- Add the peaches to the syrup and toss well to coat. Adjust sweetness with more lemon or sugar as desired.
- Transfer the peaches and syrup to a baking dish and parbake for 12 minutes.
Notes
For extra flavor, consider adding a dash of vanilla extract to the peach mixture.
Adjust sweetness based on the natural sugar content of the peaches used.
Serve warm with a scoop of ice cream or whipped cream for a luxurious finish.
