Description

This Peach Cobbler is a delightful treat made with juicy peaches, sugar, and a buttery crust. It’s easy to prepare and perfect for summer gatherings or family dinners. Enjoy a taste of homemade comfort with every bite!


Ingredients

  • 1.5 kg yellow peaches, peeled, stone removed, cut into eight wedges
  • 1/4 cup caster sugar
  • 1 tsp cornflour
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1 1/4 cups plain flour
  • 1/3 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 85 g unsalted butter
  • 1/2 cup plain yoghurt
  • 1 tsp demerara sugar
  • 1/2 tsp cinnamon powder
  • Ice cream or whipped cream

Instructions

  1. In a large bowl, mix the peaches with sugar and let them macerate for 40 minutes to release their juices.
  2. Preheat your oven to 210°C (410°F) during the last 20 minutes of maceration.
  3. After maceration, drain the peaches in a colander, reserving the juices.
  4. In a large bowl, combine 1/4 cup of the reserved peach juice with cornflour, salt and 1 tbsp lemon juice, mixing until well combined.
  5. Add the peaches to the syrup and toss well to coat. Adjust sweetness with more lemon or sugar as desired.
  6. Transfer the peaches and syrup to a baking dish and parbake for 12 minutes.

Notes

For extra flavor, consider adding a dash of vanilla extract to the peach mixture.
Adjust sweetness based on the natural sugar content of the peaches used.
Serve warm with a scoop of ice cream or whipped cream for a luxurious finish.
