Description

Ingredients

  • 3 pounds ripe peaches, peeled, pitted and cut into 8 pieces
  • 2/3 cup white granulated sugar
  • 2 tablespoons corn starch
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup dark brown sugar, packed
  • ¾ cup white all-purpose flour
  • 2/3 cup old fashioned rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ stick salted butter, cut into very small pieces

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a 9-inch baking dish with non-stick spray and set aside.
  3. In a large bowl, combine sliced peaches with sugar and toss to coat evenly. Set aside.
  4. In a medium bowl, mix together brown sugar, flour, oats, cinnamon, and nutmeg.
  5. Add diced butter to the flour mixture, using a pastry blender or fork to create coarse crumbs.
  6. In the bowl of peaches, add vanilla, cornstarch, cinnamon, and salt, then toss gently to combine.
  7. Pour the prepared peach mixture into the bottom of the greased baking dish.
  8. Spread the crumb topping evenly over the peaches.
  9. Bake for 45-50 minutes, until the topping is golden brown and juices are bubbling.
  10. Remove from the oven and let rest for 15 minutes before serving.
  11. Optional: Serve warm with vanilla ice cream and a sprig of mint.

Notes

For extra sweetness, use ripe peaches.
You can substitute brown sugar with coconut sugar for a healthier option.
Adjust spices to taste, adding more cinnamon or nutmeg if desired.
