  • 2 cups all-purpose flour
  • 2 teaspoons flour for coating peaches
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup plain greek yogurt, at room temperature
  • 1 1/2 cups diced peaches
  • 2 tablespoons turbinado sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with 12 paper liners, spraying them with nonstick cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt. Set aside.
  3. In a stand mixer, beat the unsalted butter and granulated sugar together until light and fluffy, approximately 2 minutes. Add the large eggs and vanilla extract, mixing until well combined.
  4. Incorporate the plain Greek yogurt into the mixture until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low until just combined. Avoid overmixing. Toss the diced peaches with the reserved flour and gently fold them into the batter.
  6. Evenly divide the muffin batter among the prepared muffin cups, using a large ice cream scoop for ease.
  7. In a small bowl, mix the turbinado sugar with ground cinnamon and sprinkle it over the muffin tops.
  8. Bake for 20-24 minutes or until the tops are golden and set. A toothpick inserted into a muffin should come out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best flavor, use ripe, juicy peaches.
These muffins can be stored in an airtight container for up to 3 days. They also freeze well for up to 3 months.
