Description

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk ricotta cheese
  • 3 large eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 3/4 cups chopped peaches, 2-3 peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • 1/2 teaspoon pure vanilla extract
  • 1 to 2 tablespoons whole milk

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium saucepan, melt the butter over medium heat until foamy and nutty, about 5-7 minutes. Transfer to a bowl and cool.
  3. To make the streusel, combine the cooled browned butter, flour, and sugar in a bowl. Refrigerate while you prepare the cake batter.
  4. In a large bowl, whisk together 1 1/2 cups flour, 1 cup sugar, baking powder, cinnamon, and salt.
  5. In another bowl, mix the ricotta, eggs, and vanilla together. Slowly incorporate the melted butter until smooth.
  6. Combine the ricotta mixture with the dry ingredients. Fold in the chopped peaches gently to combine.
  7. Prepare a 9-inch springform pan with nonstick spray, pour in the batter, and top with streusel mixture evenly.
  8. Bake for 45-55 minutes until a toothpick inserted in the center comes out clean. Cool on a rack for 30 minutes before removing the springform.
  9. To make the glaze, whisk together confectioners’ sugar, honey, vanilla, and milk until smooth, adjusting milk as needed.
  10. Drizzle the glaze on the cooled cake, slice, and serve!

Notes

Ensure the butter is cooled before adding to the ricotta mixture to avoid cooking the eggs.
Feel free to substitute peaches with other fruits like blueberries or raspberries for a different flavor.
The honey glaze is optional but adds a lovely sweetness to the cake.
