  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together the pumpkin purée, 1½ cups of sugar, pumpkin spice, and cinnamon in a medium saucepan.
  2. Combine cornstarch and apple juice in a small bowl, then pour this mixture into the saucepan and whisk.
  3. Cook over medium heat until it gently boils, then simmer for about 10 minutes, stirring occasionally. Let it cool completely after removing from heat.
  4. For the cookie dough, beat melted butter and 1 cup of sugar together until thickened using a hand mixer for 2-3 minutes.
  5. Add molasses and egg, and beat until the mixture is smooth and well combined.
  6. Incorporate baking soda, cinnamon, pumpkin pie spice, salt, and flour into the butter mixture until it forms a soft dough; add more flour if sticky.
  7. Chill the dough in the fridge for 30 minutes. Preheat the oven to 350°F and roll the dough to ¼ inch thick on a floured surface.
  8. Cut out cookie shapes, ensuring to create the tops with faces using a sharp knife.
  9. Spoon pumpkin filling onto half of the cookies; top with face cookies and gently press edges to seal.
  10. Bake cookies on a parchment-lined sheet for 10-13 minutes, cooling on the sheet for a few minutes before transferring to a rack.
