- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1/3 cup pumpkin puree
- 1 ¾ cups finely ground graham cracker crumbs
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- 12 ounces white chocolate chips
- optional: extra graham cracker crumbs or english toffee bits to dust
Instructions
- In a mixing bowl, combine the softened cream cheese and powdered sugar, and beat until creamy.
- Add pumpkin puree and cinnamon, mixing until smooth at a medium speed.
- Incorporate the graham cracker crumbs, pumpkin pie spice, and cinnamon, mixing until fully blended and thick for about 1-2 minutes.
- Transfer the mixture to a small bowl, cover it, and refrigerate for about 2 hours.
- Prepare a baking sheet with parchment paper.
- Scoop tablespoon-sized portions of dough and roll into balls, placing them 2 inches apart on the baking sheet to form approximately 20 truffles.
- Chill for 20-25 minutes before dipping in chocolate.
- For the white chocolate, add the chips to a microwave-safe bowl and heat at 100% power for 10-15 seconds, stirring until melted. Avoid overheating!
- Remove chilled truffles one at a time, dip in melted chocolate, and use a fork to ensure they are fully covered.
- Scrape excess chocolate off the fork when removing truffles from the melting chocolate.
- Return dipped truffles to the prepared baking sheet, keeping their sides clean with another fork if necessary.
- Repeat with remaining truffles, re-dipping if needed after they have set enough to handle.
- Sprinkle English toffee bits or graham cracker crumbs over the tops immediately after dipping, and let the truffles set until the chocolate hardens.
- Refrigerate until ready to serve. Truffles hold well at room temperature for a few hours.
Notes
For a firmer texture, refrigerate the truffles for longer after rolling.
These truffles are suitable for making ahead of time and can be stored in the fridge for several days.
