Instructions
- Preheat the waffle iron and spray it with nonstick cooking spray.
- Separate the egg whites and place them in a mixing bowl; set the yolks aside. Beat the egg whites until stiff peaks form and set aside.
- In a large bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Make a well, then add egg yolks, pumpkin puree, milk, vanilla extract, and vegetable oil. Whisk until nearly smooth, leaving some lumps.
- Gently fold the egg whites into the batter until no streaks remain, taking care not to overmix.
- Pour the batter into the preheated waffle iron following the manufacturer's instructions, cooking until golden brown on both sides.
