- 12 oz. potato gnocchi
- 1 large bell pepper, chopped into chunks
- 1 pint cherry tomatoes
- ½ red onion, chopped into chunks
- ½ cup olive oil, separated
- ¼ cup fresh lemon juice, separated
- 1 teaspoon sea salt, divided
- ½ teaspoon ground black pepper, divided
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh mint
- ¼ cup fresh chopped cilantro
- 4 oz. goat cheese crumbles
Instructions
- Preheat the grill to 400℉ and spray the grates with cooking spray.
- Bring a large pot of salted water to a boil. Cook the gnocchi for 1 minute, then drain and rinse with cold water. Set aside.
- In a 9×13 baking dish, combine ¼ cup olive oil, 2 tablespoons lemon juice, ½ teaspoon sea salt, and ⅛ teaspoon black pepper. Whisk well.
- Build the skewers by alternating gnocchi, bell peppers, onions, and cherry tomatoes until all ingredients are used.
- Roll each skewer in the olive oil and lemon juice mixture, reserving some for dressing later.
- Place the skewers on the grill for 20 minutes, rotating every 5 minutes. Once grilled, remove and set aside on a serving plate.
- For the dressing, combine the remaining olive oil, lemon juice, salt, pepper, and herbs in the baking dish with leftover oil and lemon juice. Whisk together.
- Pour the dressing over the grilled skewers and garnish with goat cheese crumbles.
Notes
Ensure the gnocchi are cooked al dente for the best texture.
