- 2 cups (142g) raspberries
- 2 cups (240g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 4 tablespoons (57g) butter, softened
- 1 large egg, at room temperature
- 2 teaspoons vanilla extract
- 1 teaspoon orange zest
- 1/2 cup (113g) whole milk, room temperature
Instructions
- Preheat your oven to 375ºF. Line a 9-inch cake pan with parchment paper. Set aside.
- Prepare the streusel: In a small bowl, combine granulated sugar, brown sugar, flour, cinnamon, ginger, and salt. Mix well, then cut in the butter until a crumb mixture forms.
- In a medium bowl, mix the flour, baking powder, and salt.
- In another bowl, cream the softened butter. Add granulated sugar and continue beating until fluffy. Incorporate the egg one at a time, mixing well after each addition. Add vanilla and orange zest.
- Add half of the milk and half of the flour mixture, stirring until just combined. Repeat with the remaining milk and flour, being careful not to overmix.
- Pour half of the batter into the prepared pan, then layer with half of the raspberries. Top with the remaining batter, then the rest of the raspberries.
- Sprinkle the streusel topping evenly over the cake.
- Bake for 35-45 minutes or until a toothpick comes out clean when inserted into the center.
- Let the cake cool on a wire rack for 10 minutes before cutting into squares for serving.
Notes
Ensure the butter is cold when making the streusel topping for a crispier texture.
Use fresh raspberries for the best flavor, but frozen will work in a pinch; just increase bake time slightly.
