Description

This Roasted Cherry Tomatoes with Garlic recipe delivers an irresistible flavor with easy preparation. Using fresh cherry tomatoes, aromatic garlic, and a splash of balsamic vinegar, it’s ideal for quick dinners or healthy meals.

Ingredients

Scale
  • 1 pound cherry tomatoes
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, finely chopped or minced
  • 1 teaspoon italian seasoning
  • 1 teaspoon balsamic vinegar
  • salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine cherry tomatoes, olive oil, minced garlic, and Italian seasoning. Toss everything to mix well.
  3. Spread the cherry tomatoes in a single layer on an oven-safe cast-iron skillet or a large baking sheet.
  4. Bake in the preheated oven until the tomatoes burst and become tender, about 20 minutes.
  5. Once out of the oven, drizzle with balsamic vinegar and season with salt and pepper to your taste. Serve hot.

Notes

For extra flavor, consider adding fresh herbs like basil after baking.
Serve over pasta or as a side dish for meats and fish.
Leftovers can be stored in the fridge for up to 3 days.
