Description

This Sheet Pan Salmon features juicy salmon fillets paired with vibrant green beans and tomatoes, all roasted to perfection with a flavorful marinade. It’s a healthy and quick dinner option that’s bound to impress anyone at the table!


Ingredients

Scale
  • 4 salmon fillets
  • Salt and pepper
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • Zest ½ lemon
  • Juice 1 lemon, approx. 2 tbsp
  • 1 ½ tsp oregano
  • 1 tsp paprika
  • 12 oz green beans, larger ones cut in half
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, and paprika.
  3. Place the green beans in a bowl, drizzle with 1 tablespoon of the marinade, and toss to coat. Transfer the green beans to the baking sheet and roast for 5 minutes.
  4. Remove the baking sheet from the oven and add the halved tomatoes. Drizzle with another tablespoon of the marinade and toss to combine.
  5. Make space in the center of the baking sheet for the salmon fillets. Season with salt and pepper and brush the remaining marinade over them.
  6. Return the baking sheet to the oven and roast for 10-12 minutes. Then switch the oven to broil for an additional 2-3 minutes.
  7. OPTIONAL: Before serving, sprinkle feta cheese and fresh herbs like chopped parsley or dill over the salmon.

Notes

For extra flavor, let the marinade sit for 10-15 minutes before using it.
Feel free to substitute vegetables based on your preference or what you have on hand.
