Description

Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 and 1/4 cups granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 bags freeze-dried strawberries (68 g total)

Instructions

  1. Preheat the oven to 325°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk the flour, baking soda, and salt together. Set aside.
  3. In a stand mixer or large mixing bowl, beat the butter and sugars on medium speed for about 3 minutes until fluffy. Add vanilla and mix well.
  4. Reduce speed to medium-low, add eggs one at a time, beating well after each addition and scraping the bowl as needed.
  5. Lower speed to low and incorporate the flour mixture until just combined. Mix in white chocolate chips and freeze-dried strawberries until evenly combined.
  6. Using a cookie scoop, measure 3 tablespoons of dough, roll into a ball, and place on the prepared baking sheet with the prettiest side facing up. Leave 2 inches between each.
  7. Bake one sheet at a time for 12 to 13 minutes until golden at the edges but soft in the center.
  8. Remove cookies from the oven and use a spatula to tuck in any edges that spread.
  9. Optionally, press extra white chocolate chips on top. Cool on the baking sheet for 20 minutes.

Ensure the butter is at room temperature for best mixing results.
Store cookies in an airtight container for up to a week to maintain freshness.
