  • 2 cups shredded zucchini
  • 1 cup semisweet chocolate chips
  • 3/4 cup chopped dark chocolate

Instructions

  1. Preheat your oven to 350°F. Grease a 8.5-4.5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder. Set aside.
  3. In a large bowl, whisk the eggs, vegetable oil, greek yogurt, granulated sugar, and vanilla extract until smooth and well combined.
  4. Stir in the shredded zucchini until fully mixed in.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Fold in the semisweet chocolate chips evenly into the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top. Optionally, top with dark chocolate chunks.
  8. Bake for 55 to 70 minutes, checking at 55 minutes for doneness with a toothpick; it should come out with a few moist crumbs.
  9. Allow the bread to cool in the pan for about 15 minutes before using the parchment paper to lift it out onto a wire rack to cool completely.

Notes

You can use melted coconut oil instead of vegetable oil for a different flavor.
