Description

These Zucchini Fritters bring irresistible flavor and simple preparation together for a delightful dish. Made from fresh zucchini, eggs, and cheese, they make a great quick dinner or healthy meal option.


Ingredients

  • 3 tbsp avocado, canola, or vegetable oil for cooking
  • 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
  • 1 cup panko bread crumbs
  • 2 eggs
  • 1/3 cup fresh grated parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper

Instructions

  1. Grate the zucchini using a box grater with larger holes and transfer it into a mesh bag or cheese cloth. Squeeze out as much liquid as possible to avoid soggy fritters.
  2. Place the squeezed zucchini into a mixing bowl and add the remaining ingredients. Mix until everything is well combined.
  3. Preheat a large pan over medium heat, then lower the temperature slightly. Add oil and use an ice cream scoop or smaller scoop to portion the zucchini mixture. Gently shape the fritters with your hands and place them in the pan.
  4. Cook the fritters for 4-6 minutes on each side, adjusting the cooking time based on their size. Avoid disturbing them until it's time to flip, and aim to flip them only once to maintain their structure.
  5. If making multiple batches, add a little more oil to the pan between batches.

Notes

Make sure to remove as much moisture from the zucchini as possible before mixing with other ingredients to achieve better texture.
When cooking, maintain a medium to medium-low heat to prevent burning while ensuring the inside cooks thoroughly.
